These lavender Ice cubes are a great way to jazz up water or cocktails and are a great way to use lavender in the kitchen
Nothing to me says summer like a the blooming of lavender and a refreshing cold drink. This recipe combines the two to make the perfect summer treat.
Lavender Ice Cube Ingredients
And one of the best things about this is that it uses only two ingredients:
- lavender and
- water
You are going to need an ice cube tray. You could use the regular rectangular ice cube trays that come with many freezers however for a fancier ice cube we recommend a shaped ice cube mold made from silicon.
For my ice cubes I used a long thin mold as I think they add more of a wow factor and mean that you can add lavender in long impressive sprigs.

Instructions for Lavender Ice Cubes
Cut pieces of lavender to around 1.5 inch to 2 inch block from your plant, or to the correct size for your ice cube tray.
Boil water and leave to cool.
Once the water has cooled slowly add in water to the cube tray to prevent the lavender from moving position.
Put on lid and leave in freezer for 4 hours.
Take out of the freezer and turn out of the mold.
And serve.

Storage
Once frozen, these can be kept in an air tight freezer container for up to one month.

These lavender ice cubes are really versatile as they have a mild yet distinctive lavender flavor that will really infuse the taste of summer into your drink.
We like to use them in:
- pitchers of water – it adds a refreshing flavour that takes me make to drinking water in luxury spas.
- Gin and Tonics – I love gin and tonic, and botanicals like lavender pairs well with the botanicals you find in gin. It also adds a colorful dimension to your drink.
- Cocktails – these ice cubes make am impact and can visually liven up a clear cocktail drink.
Variations and Substitutions
Want to mix things up a bit why not try:
- Citrus – Lavender and Lemon are a match made in heaven. For even more of a spa feeling why not try adding some cut up lemon or lemon slices into your cucumber mold too.
- Herby Ice Cubes – to make these ice cubes more herby why not try adding mint, lemon verbena or basil into the molds too.
Tips for Making Lavender Ice Cubes

We recommend getting a larger ice cube mould for your ice cubes to have a greater effect when served. We like using these long thin ice cube molds with lavender but blocks and spheres also work really well.

Ingredients
- 8 sprigs of lavender
- water
Instructions
- Boil water and set aside to cool.
- Cut lavender sprigs to 1.5 inches - 2 inches (or to size to fit your ice cube tray)
- Place lavender into ice cube tray
- Once water has cooled add into ice cube mold.
- Put on lid and freeze for 4 hours (or until fully frozen)
Notes
Boiling water isn't essential however if you want crystal clear ice cubes it is best to boil the water and let it cool before using.
